Easy Smoked Scallops
This Muurikka Electric Smoker Recipe will have you well and truly hooked.
For the Smoker Wood Chip Mixture1 lime peeled and juiced, 5g star anise, dried lime peel, 75g demerera sugar, oak wood chips
12 king scallops
juice of 1 lime, 50g caster sugar, 25ml fish sauce, 25ml soy sauce, 20ml rice wine vinegar, 20ml vegetable oil
Lightly season the scallops. Leave to reach room temperature.
Blend the dried lime peel with the star anise, mix in the sugar and oak chips. Place in your Muurikka Electric Smoker.
Place the scallops on a layer of foil, on the grating tray and place in your electric smoker and smoke for 8 to 10 minutes.
Meanwhile whisk together the dressing ingredients in a pan over a low heat until the sugar has dissolved.
Remove the scallops and pan fry or heat under a grill until they brown.
Serve with mash and/or an oriental style salad and the dressing.
