Smoked Baby Salmon Recipe

Ingredients:

1.5kg baby salmon 
10g salt flakes 
5g Olsons thyme & Oregano sea salt rub 
Hickory wood chips 
20g brown sugar

Directions:

Trim fins and tail of baby salmon.

Using a sharp knife cut three diagonal slits into salmon. Sprinkle with salt flakes and rub Thyme & Oregano rub into slits. 

Place salmon on smoking rack. Combine hickory chips and sugar on electric smoker tray. Add 2 tablespoons of water to wood chips.

Smoke for 40 minutes or until browned lightly and skin pulls back easily from flesh.

Stand 10 minutes.
