SMOKED CHICKEN WITH FRESH HERB RECIPE

IN THE MUURIKKA ELECTRIC SMOKER

 

INGREDIENTS:

1.5kg whole chicken, butterflied 

6 tablespoons olive oil

1/4 cup peanut oil

1/4 cup chopped fresh flat-leaf parsley

2 tablespoons Dijon mustard

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh oregano

2 tablespoons fresh lemon juice

4 teaspoons Worcestershire

1 garlic clove, minced

2 teaspoons table salt

1/2 teaspoon black pepper

 

DIRECTIONS:

Mix all ingredients together and place in a plastic freezer bag then add chicken. Seal bag and ensure that the chicken is evenly coated.  Refrigerate for 8 hours or so.

Remove chicken from refrigerator (reserving the marinade). Line the grating tray with foil. Place chicken skin side up and roast for 20 minutes (without the wood chips).

After this time, open the electric smoker and remove chicken.  Pour the marinade evenly over the chicken and return to the smoker.

Insert wood chip tray into the electric smoker and smoke for a further 40-45 minutes.
