Muurikka Electric Smokers team up with
AMBASSADOR CLAYTON DONOVAN
We learnt a lot from Clayton at OzHarvest. Rather than adding smokey flavours to white fish and mushrooms with wood chips in the electric smoker, Clayton opted to use native lemon myrtle leaves and brown sugar!
Clayton believes that native bush foods are very much like the Australian personality.
“Strong, in your face, bold, extroverted. They’re a scary thing for alot of chefs because of that. You have to learn to use just a pinch of ingredients like lemon myrtle and pepperberry otherwise they will overwhelm.”
